Ingredients

For the Vanilla Sponge Layers
  • 2 1/2 cups all purpose flour
  • 2 1/2 tsp baking powder
  • 1/2 tsp fine salt
  • 1 cup unsalted butter softened
  • 1 1/2 cups granulated sugar
  • 4 large eggs at room temperature
  • 2 tsp alcohol free vanilla extract
  • 1 cup whole milk at room temperature
For the Espresso Soak
  • 1 cup strong brewed espresso or very strong coffee cooled
  • 2 tbsp granulated sugar
  • 1/2 tsp alcohol free vanilla extract
For the Mascarpone Cream
  • 16 oz mascarpone cheese cold
  • 1 3/4 cups cold heavy cream
  • 1/2 cup powdered sugar sifted
  • 2 tsp alcohol free vanilla extract
  • Pinch of fine salt
For Finishing
  • 2 tbsp unsweetened cocoa powder for dusting
  • 1 oz dark chocolate shaved
  • Fresh raspberries optional

Equipment

  • Three 8 inch round cake pans bake three even layers for a tall, balanced cake
  • Digital kitchen scale divides the batter evenly so the layers match
  • Pastry brush brushes the espresso soak evenly across each layer
  • Hand or stand mixer creams the butter and whips the cream
  • Serrated knife trims domed tops so the layers stack flat
  • Offset spatula spreads the cream in smooth, even swoops

Method

  1. Heat the oven to 350°F, then grease and line the pans. Whisk the flour, baking powder, and salt in a medium bowl.
  2. Beat the butter and sugar for 3 minutes, until pale and fluffy, then add the eggs one at a time and the vanilla.
  3. Add the flour mixture in three parts, alternating with the milk in two parts, on low speed, until no dry streaks remain. Divide one third of the finished batter into each pan and bake at 350°F for 20 to 24 minutes, until golden, the tops spring back, and a toothpick comes out clean.
  4. Rest the layers in the pans for 10 minutes, then turn them out onto a wire rack for 1 hour. They should feel cool to the touch before you add cream.
  5. Stir the cooled espresso, sugar, and vanilla until the sugar dissolves. The soak should taste strong and lightly sweet.
  6. Beat the cold cream, powdered sugar, and salt for 2 to 3 minutes, until it forms soft, floppy peaks. In a separate bowl, stir the cold mascarpone and vanilla with a spatula for 10 seconds, until just loose, then fold in the whipped cream in two additions until smooth and fluffy.
  7. Trim any domes flat, set the first layer on a plate, and brush it with 1/3 cup of soak. Spread about 1 1/4 cups of cream over it, repeat with the second layer, then add the third and brush it with the remaining soak. Cover the top and sides with the leftover cream.
  8. Refrigerate the cake for at least 6 hours, or overnight, until firm. Sift the cocoa over the top just before serving and add the chocolate shavings and raspberries.
  9. Brush the soak on in a measured amount and keep the mascarpone cold; too much liquid makes a soggy cake, and warm mascarpone makes a loose, grainy cream.

Notes

  • Weigh the batter so the layers are even.
  • Fold the mascarpone with a spatula, not a mixer.
  • Dust the cocoa on within 2 hours of serving.
Storage: Refrigerate covered up to 4 days, or freeze unfrosted layers up to 3 months.
Prep time includes 30 minutes for assembly. Allow 70 minutes for cooling and at least 6 hours for chilling. Timing assumes softened butter and room-temperature eggs and milk.
