Ingredients

For the Potatoes
  • 2 1/2 lb Yukon Gold potatoes scrubbed and cut into 1-inch pieces
  • 2 tsp fine salt for cooking water
  • 1 tbsp apple cider vinegar
For the Dressing and Crunch
  • 1/2 cup mayonnaise
  • 1 tbsp yellow mustard
  • 1 tbsp dill pickle brine
  • 1/4 tsp fine salt plus more to taste
  • 1/4 tsp ground black pepper
  • 2 celery ribs finely diced
  • 1/3 cup dill pickles finely chopped and drained
  • 3 scallions thinly sliced
  • 2 tbsp fresh dill chopped and divided

Equipment

  • Large pot simmers the potatoes
  • Colander drains off the cooking water
  • Rimmed tray cools the potatoes in a single layer
  • Mixing bowls and whisk blend the dressing and hold the salad
  • Flexible spatula folds the potatoes gently

Method

  1. Put the potato pieces in a large pot and cover with cold water by an inch. Add the 2 teaspoons of cooking salt and bring to a boil.
  2. Lower the heat to a gentle simmer. Start testing after 10 minutes and allow about 10 to 15 minutes of simmering. A thin knife should slide through the middle while the piece holds its shape when lifted.
  3. Drain thoroughly and spread the potatoes on a rimmed tray. Sprinkle with the vinegar while warm and turn gently. Refrigerate the shallow tray until the pieces feel cool, about 30 minutes or longer if needed.
  4. Mix the mayonnaise, mustard, pickle brine, 1/4 teaspoon salt, and pepper until smooth. Stir in the celery, pickles, scallions, and all but the reserved teaspoon of dill.
  5. Put the cool potatoes in a large bowl, add the dressing, and fold with a flexible spatula. Cover and refrigerate for at least 1 hour. Taste a potato with some dressing, adjust the seasoning, and scatter the reserved dill over the bowl.
  6. Sprinkle the vinegar over the warm, freshly drained potatoes, then cool them before folding in the mayonnaise dressing.

Notes

  • Reserve 1 teaspoon of chopped dill for garnish.
  • Thin skins may be left on or peeled before cooking.
  • Cooling time depends on tray size and potato temperature. Allow longer if the pieces are still warm.
Storage: Refrigerate covered at 40°F (4°C) or colder for up to 3 to 4 days from the day the potatoes were cooked.
