Ingredients

For the Chocolate Custard Base
  • 1 1/2 cups whole milk
  • 2 cups heavy cream
  • 3/4 cup granulated sugar divided
  • 1/2 cup unsweetened Dutch process cocoa powder sifted
  • 5 large egg yolks
  • 2 tbsp honey
  • 1/4 tsp fine salt
  • 4 oz bittersweet chocolate finely chopped
  • 2 tsp alcohol free vanilla extract
  • 1 tsp instant espresso powder optional
For Mix Ins, Optional
  • 1/2 cup mini chocolate chips or finely chopped dark chocolate
For Serving
  • Chocolate shavings
  • Fresh raspberries
  • Waffle cones or chilled bowls

Equipment

  • Ice cream maker with frozen bowl churns the base into a smooth, airy texture
  • Instant read thermometer confirms the custard reaches 175°F without scrambling the yolks
  • Fine mesh strainer sifts the cocoa and strains the custard silky
  • Heatproof bowl melts the chopped chocolate with the hot custard
  • Large whisk blends the cocoa into the milk without lumps
  • Shallow freezer safe container freezes the ice cream quickly and evenly

Method

  1. Whisk the sifted cocoa into the cold milk in a heavy saucepan until smooth, then add the cream, 6 tablespoons of the sugar, and the salt. Heat over medium heat for 5 minutes, stirring often, until steaming with tiny bubbles around the edge, about 170°F.
  2. Whisk the yolks, remaining 6 tablespoons sugar, and honey for 2 minutes, until pale and thick. The mixture should fall from the whisk in a slow ribbon.
  3. Whisk 1 cup of the hot chocolate cream into the yolks slowly, a spoonful at a time, then pour everything back into the pot. The mixture should look dark and glossy.
  4. Cook over medium low heat for 6 to 8 minutes, stirring constantly, until it reaches 175°F and coats the back of a spoon. Strain it over the chopped chocolate, then whisk until the chocolate melts and the base looks glossy, and stir in the vanilla and espresso powder.
  5. Cool the bowl in the ice bath for 15 minutes, press plastic wrap onto the surface, and refrigerate for at least 6 hours, or overnight, until very cold.
  6. Churn the chilled base for 25 to 30 minutes, until it looks like thick soft serve, then fold in the optional chocolate chips.
  7. Scoop the ice cream into the chilled container, press parchment onto the surface, and freeze for at least 4 hours, until firm. Let it sit for 10 minutes before scooping.
  8. Whisk the cocoa into cold milk and cook the custard only to 175°F; cocoa in hot liquid clumps, and overheated yolks make the ice cream taste eggy and gritty.

Notes

  • Freeze the ice cream maker bowl for 24 hours.
  • Use Dutch process cocoa and bittersweet bars, not chips.
  • Let the container sit for 10 minutes before scooping.
Storage: Freeze airtight up to 2 weeks for the best texture, and refrigerate the base up to 2 days.
Total time excludes freezing the machine bowl for at least 24 hours beforehand. Chill the cooked base to 40°F or colder before churning, and follow the machine’s maximum fill level.
