Banana Fritters

Quick and Easy Banana Fritters

Crispy on the outside and soft, sweet, and warm in the middle, these banana fritters turn a few overripe bananas into a golden fried treat in under 25 minutes. A simple, lightly spiced batter coats banana pieces before they hit hot oil, creating that perfect contrast of crunchy edges and tender centers. They are just as satisfying dusted with cinnamon sugar for breakfast as they are drizzled with honey for a quick dessert.

Ingredients

  • 4 large ripe bananas mashed or sliced
  • 1 cup all purpose flour
  • 1/4 cup granulated sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 tsp ground cinnamon
  • 1/3 cup milk
  • 1 large egg
  • 2 cups vegetable oil for frying
  • Powdered sugar or cinnamon sugar for dusting

Equipment

  • 1 Heavy bottomed frying pan or wok holds steady heat for even frying
  • 1 Large mixing bowl for mashing bananas and mixing the batter
  • 1 Whisk or fork for mashing bananas and blending wet ingredients
  • 1 Slotted spoon or spider strainer lifts fritters out cleanly while leaving excess oil behind
  • 1 Paper towel lined plate drains extra oil right after frying
  • 1 Kitchen thermometer, optional confirms the oil has reached the right frying temperature

Method

  1. Mash bananas, leaving a few small chunks.
  2. Whisk together flour, sugar, baking powder, salt, and cinnamon.
  3. Whisk milk and egg into the mashed bananas.
  4. Combine wet and dry ingredients into a thick batter.
  5. Heat oil to 350°F in a heavy bottomed pan.
  6. Fry heaping tablespoons of batter in small batches, 2 to 3 minutes per side, until golden.
  7. Drain on paper towels and dust with sugar while warm.

Notes

  • Use very ripe, speckled bananas for the best flavor and sweetness.
  • Keep the oil at a steady medium heat and fry in small batches to avoid greasy or unevenly cooked fritters.
  • Do not overmix the batter once combined.
  • Use a heavy bottomed pan or wok, since it holds heat more evenly than a thin pan and helps prevent temperature swings while frying.
STORAGE: Refrigerate up to 2 days or freeze up to 2 months; reheat in an air fryer or oven to restore crispiness.
