Ingredients

For the Sloppy Joe Filling
  • 1 tbsp neutral oil
  • 1 1/2 lb ground beef 85 percent lean
  • 1 medium yellow onion finely diced
  • 1 small green bell pepper finely diced
  • 3 cloves garlic minced
  • 2 tbsp tomato paste
  • 1 tsp mild American-style chili powder blend
  • 1 tsp smoked paprika
For the Sauce
  • 3/4 cup ketchup
  • 1 can (8 oz) tomato sauce
  • 1/2 cup low sodium beef broth or water
  • 2 tbsp packed light brown sugar
  • 1 tbsp apple cider vinegar
  • 1 tbsp Worcestershire sauce
  • 1 tbsp yellow mustard
  • 3/4 tsp fine salt
  • 1/2 tsp black pepper
  • 1/4 tsp red pepper flakes optional
For the Buns
  • 6 hamburger buns split
  • 2 tbsp unsalted butter softened
For Topping
  • 3/4 cup shredded sharp cheddar optional
  • Dill pickle slices optional

Equipment

  • 12 inch deep skillet browns the beef and simmers the sauce with plenty of room
  • Meat chopper or wooden spoon breaks the beef into small, even crumbles
  • Small whisk blends the sauce ingredients until smooth
  • Instant read thermometer confirms the beef reaches 160°F
  • Splatter screen keeps the bubbling sauce off the stovetop
  • Second skillet or griddle toasts the buns until golden

Method

  1. Heat the oil in a 12 inch skillet over medium high heat for 2 minutes, then add the beef. Cook for 7 to 8 minutes, breaking it into small crumbles, until the beef reaches 160°F and the pieces look deeply browned, then drain all but 1 tablespoon of the fat.
  2. Add the onion and pepper to the beef and cook for 5 minutes, stirring often, until soft and translucent. Stir in the garlic for 30 seconds, until fragrant.
  3. Stir in the tomato paste, chili powder, and paprika, and cook for 1 to 2 minutes, until the paste darkens to brick red and smells sweet.
  4. Whisk the ketchup, tomato sauce, broth, brown sugar, vinegar, Worcestershire sauce, mustard, salt, pepper, and optional pepper flakes together. Pour in the sauce mixture and stir to coat the beef. Bring to a gentle boil over medium heat, then reduce to a simmer.
  5. Simmer uncovered for 12 to 15 minutes, stirring every 2 minutes, until the sauce is thick enough that a spoon dragged through the pan leaves a clear trail.
  6. Spread the butter on the cut sides of the buns and toast them in a second skillet over medium heat for 1 to 2 minutes, until golden. Divide the filling evenly among the 6 bottom buns, top with cheese and pickles, and serve right away.
  7. Simmer the sauce uncovered until a spoon leaves a trail and toast the buns in butter; a covered pan makes a thin sauce, and a plain bun turns to mush.

Notes

  • Brown the beef well for a deeper flavor.
  • Taste the sauce before serving and adjust the sweetness with vinegar or sugar.
  • Make the filling up to 4 days ahead for the best flavor.
Storage: Refrigerate the filling up to 4 days, or freeze it up to 3 months.
