Ingredients

For the Fruits
  • 2 cups strawberries hulled and quartered
  • 1 1/2 cups blueberries
  • 1 1/2 cups seedless green grapes halved
  • 1 1/2 cups fresh pineapple chunks
  • 1 cup ripe mango cubes
  • 2 kiwis peeled and sliced into half moons
For the Honey Lime Mint Dressing:
  • 3 tbsp fresh orange juice
  • 2 tbsp honey
  • 1 tbsp fresh lime juice
  • 1 tsp lime zest
  • 2 tbsp finely chopped fresh mint
  • Small pinch of fine salt
For Garnish:
  • Fresh mint leaves
  • Toasted coconut flakes optional

Equipment

  • 1 Large glass mixing bowl shows off the colors and does not absorb flavors
  • 1 Salad spinner or colander washes and drains the fruit quickly
  • 1 Sharp paring knife cuts clean pieces without crushing the fruit
  • 1 Microplane zester zests the lime into fine strands
  • 1 Egg slicer slices strawberries and kiwi into even pieces
  • 1 Small whisk or jar blends the dressing until the honey dissolves

Method

  1. Wash the fruit and pat it completely dry.
  2. Whisk the orange juice, honey, lime juice, zest, and salt, then stir in the mint.
  3. Cut the pineapple, mango, grapes, and kiwi into 3/4 inch pieces, and quarter the strawberries.
  4. Toss the pineapple, mango, and grapes with half the dressing in a chilled bowl.
  5. Fold in the berries and kiwi with the remaining dressing.
  6. Chill for 30 minutes, then garnish with mint and serve cold.
  7. Dry the fruit well and add the berries last; wet fruit and early mixing are the main causes of a watery bowl.

Notes

  • Choose fruit that is ripe but still firm.
  • Keep banana, apple, and watermelon out of the bowl, or add them at the last minute.
  • Store the dressing separately for the crispest fruit over several days.
STORAGE: Refrigerate in an airtight container up to 3 days, or freeze undressed fruit up to 3 months for smoothies.
