This Chia Seed Jam Recipe simmers fresh or frozen berries with honey, lemon juice, and zest, then thickens them with chia seeds, with no pectin and no candy thermometer. Stirring the chia in off the heat and resting the jam for 15 minutes gives a smooth, spreadable set. Ready in about 15 minutes of work, this homemade chia seed jam is perfect on toast, yogurt, and oatmeal.

Ingredients

For the Jam:
  • 3 cups mixed berries fresh or frozen
  • 2 tbsp honey or pure maple syrup
  • 1 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 1/8 tsp fine salt
For Thickening:
  • 3 tbsp whole chia seeds
  • 1/2 tsp alcohol free vanilla extract
For Serving:
  • Toasted bread, plain Greek yogurt, oatmeal, or pancakes

Equipment

  • 1 Medium saucepan cooks the berries evenly without scorching
  • 1 Potato masher breaks the fruit down to your preferred texture
  • 1 Silicone spatula scrapes the pan and stirs in the chia smoothly
  • 1 Microplane zests the lemon into fine, fragrant strands
  • 1 Clean 12 ounce glass jar stores the jam and keeps it fresh
  • 1 Digital kitchen scale measures the berries so the jam sets reliably

Method

  1. Rinse, dry, and hull the berries, then measure out 3 cups.
  2. Simmer the berries, honey, lemon juice, and salt over medium heat for 5 minutes until soft.
  3. Mash the fruit and simmer 3 to 4 minutes more until slightly thickened.
  4. Remove from the heat and stir in the chia, zest, and vanilla for 1 minute, then rest for 15 minutes.
  5. Spoon into a clean jar, cool for 20 minutes, then refrigerate for at least 1 hour.
  6. Stir the chia seeds in off the heat and rest the jam for the full 15 minutes; hot fruit makes the seeds clump, and rushing leaves the jam runny.

Notes

  • Use ripe berries for the sweetest flavor, and taste after chilling.
  • Measure the chia carefully, since extra seeds make the jam gummy.
  • Use a clean spoon each time to keep the jam fresh for 2 weeks.
STORAGE: Refrigerate in a clean jar up to 2 weeks, or freeze up to 3 months.
